Weird name, delicious taste! This is one of my go to spreads when I’m having people over-it’s so simple, only takes minutes to make, and is always a hit with my guests. If you’re feeling a bit put off by the name, don’t worry, the original recipe my mom discovered instructed the maker to shape the spread into a “ball” and roll in sesame seeds before serving-hence the ball reference. Feel better? If not, just take one bite and all your doubts will melt away…
Here’s how to make it:
- 1 9.75 oz can of white chicken meat
- 2 4.25 oz cans of Underwood Chicken Spread
- 1 8 oz package of cream cheese
- 1 t. soy sauce
- 2 T. mayo
- 2 T. dried parsley flakes
Mix all ingredients together and place in fridge until chilled.
Once your spread is sufficiently chilled, you are ready to serve your new found heaven with crackers. It’s Friday! Go make yourself a treat. Happy weekend!

Oh my! I must try this version. I usually make a chicken salad like this minus the cream cheese and I put it on toastadas and put tapatio all over it, hehe. But I NEED to try it with cream cheese, now. :-p Thanks for the recipe.
